We look to use ingredients in different ways throughout the week so that we&#8217;re benefiting from the ability of do-aheads and being able to buy in bulk.  We also benefit from a <a href=\"https:\/\/crankymouse.com\/the-kitchen-sink\/stocking-your-pantry-for-home-cooking-the-basics\"target=\"_blank\">well-stocked pantry<\/a>.<\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/10\/red-autumn-leaf.jpg\" alt=\"\" title=\"red autumn leaf\" width=\"535\" height=\"357\" class=\"aligncenter size-full wp-image-6645\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/10\/red-autumn-leaf.jpg 535w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/10\/red-autumn-leaf-300x200.jpg 300w\" sizes=\"auto, (max-width: 535px) 100vw, 535px\" \/><br \/>\nAnd it&#8217;s October.  How did that happen?  I found a ton of produce at the farmers market this weekend.  It looked like most people had just harvested the last of a lot of stuff due to the temperature threatening to drop down into the 30s.  I happily snatched them up.  One lady even added extra patty pans for me because she knew she needed to get rid of them (benefits of shopping late on Sunday).  So, armed with what is probably the last I&#8217;ll see of the summer vegetables this season as I will be in San Francisco next weekend, I&#8217;m celebrating.<br \/>\n<br clear=\"all\">A few things of note on this menu.  I will be making Thursday and Friday&#8217;s meals for my family or at least prepping them so that Ole isn&#8217;t forced to juggle unnecessarily.  Enchiladas freeze beautifully, but they will also store for a day in the fridge until they&#8217;re ready to be baked.  I&#8217;m adding a delicata squash to the roasted vegetable sandwiches.  It&#8217;s a great squash, and you can just scrub the skin well and leave it right on for some extra texture.  <\/p>\n<blockquote><p><br clear=\"all\"><strong>Monday \u2013 <\/strong><a href=\"http:\/\/www.goodlifeeats.com\/2010\/09\/open-face-roasted-vegetable-sandwiches.html\" target=\"_blank\">Open Face Roasted Vegetable Sandwiches<\/a><br \/>\n<br clear=\"all\"><strong>Tuesday \u2013 <\/strong><a href=\"https:\/\/crankymouse.com\/recipes\/saying-goodbye-to-summer-with-thai-red-curry\" target=\"_blank\">Thai Red Curry Shrimp<\/a><br \/>\n<br clear=\"all\"><strong>Wednesday \u2013 <\/strong><a href=\"http:\/\/www.101cookbooks.com\/archives\/brown-butter-tortelli-recipe.html\" target=\"_blank\">Brown Butter Tortelli<\/a><br \/>\n<br clear=\"all\"><strong>Thursday \u2013 <\/strong><a href=\"http:\/\/chaosinthekitchen.com\/2010\/10\/meatless-for-a-meal-spinach-and-mushroom-stuffed-enchiladas\/\" target=\"_blank\">Spinach and Mushroom Stuffed Enchiladas<\/a><br \/>\n<br clear=\"all\"><strong>Friday \u2013 <\/strong><a href=\"http:\/\/cookincanuck.blogspot.com\/2010\/06\/creamy-zucchini-coconut-milk-soup.html\" target=\"_blank\">Creamy Zucchini &#038; Coconut Milk Soup<\/a><br \/>\n<br clear=\"all\"><\/p>\n<h3>The Preparation Shortcuts:<\/h3>\n<p><strong>1.<\/strong> Buy mushrooms in bulk for use in both the sandwiches and the enchiladas.<br \/>\n<strong>2.<\/strong> Instead of arugula, you can sub spinach in the tortelli so that you&#8217;re using all of it once you add it to the enchiladas.<br \/>\n<strong>3.<\/strong> Zucchini and summer squash can be used in the vegetable sandwiches, in the curry and also in the soup on Friday.<br \/>\n<strong>4.<\/strong> Coconut milk finds its way to both curry and in soup for this menu.
