{"id":6546,"date":"2010-09-26T20:57:33","date_gmt":"2010-09-27T01:57:33","guid":{"rendered":"http:\/\/crankymouse.com\/?p=6546"},"modified":"2010-09-26T22:13:33","modified_gmt":"2010-09-27T03:13:33","slug":"thai-red-curry-shrimp","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2010\/09\/26\/thai-red-curry-shrimp\/","title":{"rendered":"Thai Red Curry Shrimp"},"content":{"rendered":"<p>2 tablespoons chili oil<br \/>\n4 cloves garlic, minced<br \/>\n1 medium yellow onion, diced<br \/>\n2 cups patty pan squash, whole or quartered depending on size<br \/>\n2 cups green Thai eggplant, quartered<br \/>\n3 tablespoons red curry paste<br \/>\n2 tablespoons fish sauce<br \/>\n\u00bc cup lemongrass, diced<br \/>\n2 tablespoons ginger, minced<br \/>\n1-2 Thai chilies, diced (seeded or not depending on your heat preference)<br \/>\n1 tablespoon brown sugar<br \/>\n\u00bd teaspoon salt<br \/>\n1 can coconut milk<br \/>\n1\/2 lime, juiced<br \/>\n1 pound raw shrimp, deveined and peeled<br \/>\n1 cup cilantro, stems removed<br \/>\n<br clear=\"all\">Heat chili oil over medium-high heat.  Add in garlic and saut\u00e9 for 30 seconds before adding in onion, patty pan and eggplant.  Continue to saut\u00e9 for 5-7 minutes until vegetables start to soften.  Add in red curry paste, fish sauce, lemongrass, fresh ginger, Thai chilies brown sugar and salt.  Stir to coat vegetables.  Cook for 5 minutes.  Pour in coconut milk and lime juice and simmer for 5 minutes.  Add in shrimp and cook until all shrimp are pink, stirring often, about 5 minutes.  Remove from heat and add in the cilantro leaves.
