{"id":6395,"date":"2010-09-05T13:32:33","date_gmt":"2010-09-05T18:32:33","guid":{"rendered":"http:\/\/crankymouse.com\/?p=6395"},"modified":"2010-09-05T13:32:33","modified_gmt":"2010-09-05T18:32:33","slug":"lemongrass-seared-scallops","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2010\/09\/05\/lemongrass-seared-scallops\/","title":{"rendered":"Lemongrass Seared Scallops"},"content":{"rendered":"<p>3 tablespoons rice vinegar<br \/>\n3 tablespoons lemongrass, finely chopped<br \/>\n1 teaspoon ginger, minced<br \/>\n1-2 Thai peppers, finely chopped<br \/>\n1 teaspoon soy sauce<br \/>\n1 teaspoon sesame oil<br \/>\n6-8 large sea scallops<br \/>\n2 tablespoons canola oil<br \/>\n<br clear=\"all\">Mix together rice vinegar, lemongrass, ginger, Thai peppers, soy sauce and sesame oil in a shallow plate or bowl.  Take the sea scallops and <a href=\"https:\/\/crankymouse.com\/recipes\/lemon-cream-seafood-pasta-for-hanging-on-to-summer\" target=\"_blank\">remove the tiny side muscle<\/a>.  Place the sea scallops in the marinade for 2 minutes on each side.<br \/>\n<br clear=\"all\">Heat the canola oil over medium-high heat in a medium-sized skillet.  When the oil is hot, place the scallops in the pan, searing on both sides 2-3 minutes until a crust forms.  Be sure to watch for the crust as you may need an extra minute more depending on the heat of your burner and type of pan you&#8217;re using.<br \/>\n<br clear=\"all\">Remove the seared scallops from the pan and set aside, tented with a bit of foil to keep them warm.  Add the marinade to the pan to deglaze it.  Continue to cook the marinade over medium heat, stirring frequently, to reduce about 5-7 minutes until the amount has decreased by half.
