{"id":6188,"date":"2010-08-13T10:50:04","date_gmt":"2010-08-13T15:50:04","guid":{"rendered":"http:\/\/crankymouse.com\/?p=6188"},"modified":"2014-05-21T10:19:34","modified_gmt":"2014-05-21T15:19:34","slug":"mediterranean-bean-salad","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2010\/08\/13\/mediterranean-bean-salad\/","title":{"rendered":"Mediterranean Bean Salad"},"content":{"rendered":"<p>1 1\/3 cups cooked barley<br \/>\n1 1\/3 cups cooked garbanzo beans<br \/>\n1 1\/3 cups cooked white beans<br \/>\n3 bell peppers of various colors (orange, yellow, red), chopped<br \/>\n1 cup sun-dried tomatoes<br \/>\n1\/2 cup packed fresh basil leaves<br \/>\n1\/4 cup packed fresh parsley<br \/>\n4 cloves garlic, peeled<br \/>\n1\/4 cup extra virgin olive oil<br \/>\n1\/4 cup white wine vinegar<br \/>\n1\/2 lemon, juiced<br \/>\nsalt and pepper to taste<br \/>\n<br clear=\"all\">Mix together barley, garbanzo beans, white beans and chopped peppers.  In a food processor place the sun-dried tomatoes, basil, parsley, garlic and olive oil.  Pulse until it it turns to a chunky paste.  You should still be able to see the different colors from green herbs to the red tomatoes.<br \/>\n<br clear=\"all\">Add the pesto to the beans, barley and peppers along with the white vinegar and the lemon juice.  Stir to combine.
