A Mediterranean bean salad I made back in June.  It has taken me this long to share it, but that&#8217;s because I had some other sharing I was obligated to do.  It&#8217;s a post about Greek seasoning on chicken.  It&#8217;s a post about stuffing it all together in a pita, serving it with tzatziki to make a chicken gyro and having a wonderful meal with your family and your friends and your neighbors.  It&#8217;s a post about food.<br \/>\n<br clear=\"all\">This is a post about the food I feed to my family.<br \/>\n<br clear=\"all\">I made bean salad.  I&#8217;d had some at Costco, of all places, and I was instantly drawn in.  Beans, barley, peppers, sauce.  Simple, understated and bursting with flavor.  Ole was not convinced as I cooked and drained beans and barley and stashed them away in the fridge to cool.  Note: I had originally planned to use three bell peppers in this recipe.  That is, of course, until Ole used one of them for something else.  Flexibility is key to a happy marriage.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/beans-and-barley-and-peppers.jpg\" alt=\"\" title=\"beans and barley and peppers\" width=\"535\" height=\"178\" class=\"aligncenter size-full wp-image-6184\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/beans-and-barley-and-peppers.jpg 535w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/beans-and-barley-and-peppers-300x99.jpg 300w\" sizes=\"auto, (max-width: 535px) 100vw, 535px\" \/><br \/>\nI then made a pretty simple sun-dried tomato pesto using sun-dried tomatoes, basil and parsley from our garden, garlic cloves and oil.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/sundried-tomato-pesto.jpg\" alt=\"\" title=\"sundried tomato pesto\" width=\"535\" height=\"178\" class=\"aligncenter size-full wp-image-6185\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/sundried-tomato-pesto.jpg 535w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/sundried-tomato-pesto-300x99.jpg 300w\" sizes=\"auto, (max-width: 535px) 100vw, 535px\" \/><br \/>\nMix the pesto, the beans and barley, the peppers, a bit of vinegar to pull it all together and a Mediterranean bean salad you shall have to be eaten on pitas or with pita chips or scooped up with a spoon and a fork.  And I was happy with it.  I packed it up, placed it in the fridge and told Ole to make it a meal with some cucumbers and tomatoes from the garden while <a href=\"https:\/\/crankymouse.com\/the-kitchen-sink\/news-the-kitchen-sink\/food-and-light-and-a-ray-of-sunshine-on-this-summer-day\" target=\"_blank\">I was gone<\/a>, but he was skeptical.  He did not trust me.  Turns out, I was right, but he made the chicken anyway.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/mediterranean-bean-salad.jpg\" alt=\"\" title=\"mediterranean bean salad\" width=\"534\" height=\"356\" class=\"aligncenter size-full wp-image-6172\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/mediterranean-bean-salad.jpg 534w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/mediterranean-bean-salad-300x200.jpg 300w\" sizes=\"auto, (max-width: 534px) 100vw, 534px\" \/><br \/>\nA Greek-seasoned, dry-rubbed chicken, grilled and thinly sliced.  This is what happens when you <a href=\"https:\/\/crankymouse.com\/the-kitchen-sink\/stocking-your-pantry-for-home-cooking-the-basics\" target=\"_blank\">stock your pantry<\/a>, meals become feasts in a matter of minutes.  In fact, I shared that same sentiment just today how making <a href=\"http:\/\/smithfield.com\/guest_blog\/entry\/how-your-pantry-can-save-you-money\" target=\"_blank\" rel=\"nofollow\">impromptu meals from your pantry<\/a> is so much easier when you stock that pantry.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/greek-seasoned-chicken-breasts.jpg\" alt=\"\" title=\"greek seasoned chicken breasts\" width=\"534\" height=\"356\" class=\"aligncenter size-full wp-image-6170\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/greek-seasoned-chicken-breasts.jpg 534w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/greek-seasoned-chicken-breasts-300x200.jpg 300w\" sizes=\"auto, (max-width: 534px) 100vw, 534px\" \/><br \/>\nHe also paired it with homemade tzatziki, which is easy to make and is so much better when you make it fresh.  It&#8217;s bright and lively, and it pairs nicely with said Greek-seasoned chicken.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/tzatziki.jpg\" alt=\"\" title=\"tzatziki\" width=\"534\" height=\"356\" class=\"aligncenter size-full wp-image-6175\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/tzatziki.jpg 534w, https:\/\/crankymouse.com\/wp-content\/uploads\/2010\/08\/tzatziki-300x200.jpg 300w\" sizes=\"auto, (max-width: 534px) 100vw, 534px\" \/><br \/>\nAnd he put the salad on the side (except the kids and I still put it inside) and made a gyro.  I do have to say it looks like a meal I&#8217;d love to eat. In fact, our dinner guests last month asked specifically for the recipe.  My kids cheered when it showed up on the table for a third time this summer. We already hit <a href=\"http:\/\/www.connyscreamycone.com\/\" target=\"_blank\" rel=\"nofollow\">Conny&#8217;s Creamy Cone<\/a>, and I think we&#8217;re going to attempt the beach sometime this weekend too.  I hope you all have a fantastic weekend!<\/p><\/blockquote>\n<div id=\"recipetitle\">\n<table width=\"100%\">\n<tr>\n<td>\n<h2><a href=\"https:\/\/crankymouse.com\/recipe-cards\/mediterranean-bean-salad\" rel=\"bookmark\" target=\"_blank\" title=\"Open Mediterranean Bean Salad in a print friendly window\"><span class=\"fn\">Mediterranean Bean Salad<\/span><\/a><\/h2>\n<\/td>\n<td align=\"right\"><a href=\"https:\/\/crankymouse.com\/recipe-cards\/mediterranean-bean-salad\" title=\"Click here to print this recipe card\">Print me!<\/a><\/td>\n<\/tr>\n<\/table>\n<\/div>\n<div id=\"recipebody\">\n<span class=\"ingredient\">1 1\/3 cups cooked  barley<\/span><br \/>\n<span class=\"ingredient\">1 1\/3 cups cooked garbanzo beans<\/span><br \/>\n<span class=\"ingredient\">1 1\/3 cups cooked white beans<\/span><br \/>\n<span class=\"ingredient\">3 bell peppers of various colors (orange, yellow, red), chopped<\/span><br \/>\n<span class=\"ingredient\">1 cup sun-dried tomatoes<\/span><br \/>\n<span class=\"ingredient\">1\/2 cup packed fresh basil leaves<\/span><br \/>\n<span class=\"ingredient\">1\/4 cup packed fresh parsley<\/span><br \/>\n<span class=\"ingredient\">4 cloves garlic, peeled<\/span><br \/>\n<span class=\"ingredient\">1\/4 cup extra virgin olive oil<\/span><br \/>\n<span class=\"ingredient\">1\/4 cup white wine vinegar<\/span><br \/>\n<span class=\"ingredient\">1\/2 lemon, juiced<\/span><br \/>\n<span class=\"ingredient\">salt and pepper to taste<\/span><br \/>\n<span class=\"instructions\"><br clear=\"all\">Mix together barley, garbanzo beans, white beans and chopped peppers.  In a food processor place the sun-dried tomatoes, basil, parsley, garlic and olive oil.  Pulse until it it turns to a chunky paste.  You should still be able to see the different colors from green herbs to the red tomatoes.<br \/>\n<br clear=\"all\">Add the pesto to the beans, barley and peppers along with the white vinegar and the lemon juice.  Stir to combine.  Season with salt and pepper as desired.<\/span><br \/>\n<br clear=\"all\"><br \/>\nMakes 6-8 servings.<br \/>\n<center><font size=1><a href=\"https:\/\/crankymouse.com\">Food for My Family<\/a><\/center><\/font>\n<\/div>\n<p> <\/span><\/p>\n<div id=\"recipetitle\">\n<table width=\"100%\">\n<tr>\n<td>\n<h2><a href=\"https:\/\/crankymouse.com\/recipe-cards\/greek-chicken-gyros\" rel=\"bookmark\" target=\"_blank\" title=\"Open Greek Chicken Gyros in a print friendly window\">Greek Chicken Gyros<\/a><\/h2>\n<\/td>\n<td align=\"right\"><a href=\"https:\/\/crankymouse.com\/recipe-cards\/greek-chicken-gyros\" title=\"Click here to print this recipe card\">Print me!<\/a><\/td>\n<\/tr>\n<\/table>\n<\/div>\n<div id=\"recipebody\">\n<strong>Greek Seasoning: <\/strong><br \/>\n2 teaspoons salt<br \/>\n2 teaspoons dried oregano<br \/>\n1 1\/2 teaspoons onion powder<br \/>\n2 teaspoons garlic powder<br \/>\n1 teaspoon cornstarch<br \/>\n1 teaspoon pepper<br \/>\n1 teaspoon dried parsley flakes<br \/>\n1\/2 teaspoon ground cinnamon<br \/>\n1\/2 teaspoon grated nutmeg<br \/>\n<br clear=\"all\">Mix together and store in the freezer until ready to use.<br \/>\n<br clear=\"all\"><br \/>\n<strong>Chicken Gyros:<\/strong><br \/>\n2-3 chicken breasts<br \/>\n1\/4 cup Greek seasoning (above)<br \/>\n1 cup tzatziki<br \/>\nfresh oregano<br \/>\nfresh parsley<br \/>\n1\/2 white onion, thinly sliced<br \/>\n3 plum tomatoes, thinly sliced<br \/>\n6-8 pitas<br \/>\n<br clear=\"all\">Rub chicken breasts with seasoning and grill, 5-7 minutes on each side until juices run clear.  Remove from grill and allow to rest for 5 minutes before slicing.  Finely chop a tablespoon or two of the fresh herbs and sprinkle over the onions and tomatoes.
