414px) 100vw, 414px\" \/><\/a><br \/>\n<br clear=\"all\"><strong>Flexibility is a necessity when you have to cook for a large group.<\/strong>\u00a0 Flexibility is essential if you want to buy main ingredients in bulk and be able to use them periodically without repetition.\u00a0 One of the \u201cmust haves\u201d around here is chicken breast.\u00a0 It is easy to portion out and a veritable blank canvas when it comes to meal options \u2013 it works on the grill, with pasta, in salads (or as a salad), you can stir fry it or pan fry it, you can stuff it and \u2026.. you get my point.<br \/>\n<br clear=\"all\">Well, today was a chicken breast day.\u00a0 Almost any day can be one because we buy them in 3 lb bags, frozen, boneless and on sale.\u00a0 That means we might have to wait a few months between purchases, but when the price drops we can get them for around five dollars per bag.\u00a0 <strong>So when the price is right, we invest heavily, usually to the tune of 2 or three bags.<\/strong>\u00a0 \u2013 Yes we have a large freezer \u2013<br \/>\n<br clear=\"all\">A quick note of caution, <strong>if the price seems too good to be true, check the label, certain brands treat the cuts with a salt solution.\u00a0<\/strong> This is for a variety of reasons, but it makes comparison shopping a little more difficult.\u00a0 That solution will be lost during cooking, so you may be getting less for your money when the food hits the plate.\u00a0 I usually try to avoid any meats that contain more than a 10% solution.<br \/>\n<br clear=\"all\">So what did we eat today?\u00a0 During our weekly menu planning meeting my soul mate and I agreed on chicken sandwiches.\u00a0 That sounds easy.\u00a0 But there are still many roads one can take, honey mustard, bbq, teriyaki, buffalo, ect., ect.\u00a0 Our road turned out to be a winding dirt path (in a good way, the kind of dirt path that leads to waterfalls and unicorns).\u00a0 Looking through the cupboards I realized that I was out of the \u201cSouthwest Essence\u201d seasoning that I was planning on using, so I had to improvise.<br \/>\n<br clear=\"all\">On a recent trip to the local liquor store that was closing to accommodate the new supermarket liquor store, I got a great deal on a large, premixed bottle of<strong> Mojito, a Latin-inspired drink made with rum, lime and mint.\u00a0 <\/strong>This became the inspiration for my chicken sandwich.<br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin1.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin1.jpg\" alt=\"chinkin1\" title=\"chinkin1\" width=\"400\" height=\"300\" class=\"aligncenter size-full wp-image-476\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin1.jpg 400w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin1-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><br \/>\n<br clear=\"all\"><\/p>\n<blockquote><p>I started with a marinade for the chicken:<\/p>\n<p>2\/3 cup Mojito<br \/>\n2 tbsp olive oil<br \/>\nJuice from \u00bd of a lime<br \/>\n1 tbsp smoked paprika<br \/>\n1 tsp cumin<br \/>\n1 tsp kosher salt<br \/>\n1 tsp fresh black pepper<br \/>\n1 tsp cayenne pepper (more or less depending on your desired heat)<\/p><\/blockquote>\n<p><a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin2.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin2.jpg\" alt=\"chinkin2\" title=\"chinkin2\" width=\"400\" height=\"300\" class=\"aligncenter size-full wp-image-477\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin2.jpg 400w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin2-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><br \/>\n<br clear=\"all\">Mix all of this in a zip top bag and let the chicken swim (about 5 or 6 breasts).\u00a0 I tend to do short marinades because I can\u2019t think very far ahead, but the longer the better.<br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin3.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin3.jpg\" alt=\"chinkin3\" title=\"chinkin3\" width=\"400\" height=\"300\" class=\"aligncenter size-full wp-image-478\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin3.jpg 400w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin3-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><br \/>\n<br clear=\"all\">While that is stewing, prepare your buns.\u00a0 Now our local grocer had a sale on ciabatta buns and I always try to pick them up when I can save a few cents.\u00a0 Today I got six for three bucks.\u00a0 I like using ciabatta because it looks different and toasts well with a little oil or butter.\u00a0 Whenever I have room on the grill I try to toast the bread \u2013 <strong>bread is always better toasted<\/strong>, or at least warmed.<\/p>\n<p><br clear=\"all\">For this sandwich I wanted to add a little extra flavor to the buns so I made a mixture of:<\/p>\n<blockquote><p>3 cloves of garlic (pressed)<br \/>\n2 tsp smoked paprika<br \/>\n2 tbsp olive oil<\/p>\n<p>I sliced the buns open and painted the inside with the mixture.<\/p><\/blockquote>\n<p><br clear=\"all\">Some time ago I lit the grill.\u00a0 The grill is now hot and clean and ready for the chicken.\u00a0 Turn the grill down to medium-low add the chicken and close the lid.\u00a0 Let those go for about 5 minutes while we prepare a few dressings and garnishes.\u00a0 <strong>And don\u2019t forget about the Mojito, fill a glass with ice and have one.<\/strong><\/p>\n<blockquote><p>Here\u2019s where you can get creative.\u00a0 I recruited Shaina to prepare some guacamole consisting of:<\/p>\n<p>2 avocados mashed<br \/>\nSalt and pepper to taste<br \/>\nJuice from \u00bd lime<br \/>\n1 tsp cumin<\/p><\/blockquote>\n<blockquote><p>To further complement the dish I diced some tomatoes and onions and made a faux chipotle mayo mixing together:<\/p>\n<p>3 tbsp mayo<br \/>\n\u00bd tsp smoked paprika<br \/>\n1\/3 tsp cayenne pepper<br \/>\nA few dashes of Louisiana hot sauce<\/p><\/blockquote>\n<p><br clear=\"all\">Flip the chicken and give it another 5 minutes or so to finish up.\u00a0 While this is happening, add the buns oil side down and let them toast.\u00a0 Remove the chicken to a foil lined plate, squeeze whatever lime you can find onto the chicken and wrap it all up in the foil.\u00a0 Pull the buns off when they have crisped up.\u00a0 <strong>These need to be watched closely because you definitely don\u2019t want burned buns.<\/strong><br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin4.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin4.jpg\" alt=\"chinkin4\" title=\"chinkin4\" width=\"400\" height=\"300\" class=\"aligncenter size-full wp-image-479\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin4.jpg 400w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin4-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><br \/>\n<center><br clear=\"all\">All that is left is assembly.\u00a0 <\/center><br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin5.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin5.jpg\" \u2013 tomatoes \u2013 chicken \u2013 onions \u2013 mayo \u2013 bun.\u00a0 <\/center><br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin8.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin8.jpg\" alt=\"chinkin8\" title=\"chinkin8\" width=\"400\" height=\"300\" class=\"aligncenter size-full wp-image-482\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin8.jpg 400w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin8-300x225.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><br \/>\n<br clear=\"all\">Shaina added some spring mix to hers.\u00a0 I prefer iceberg or leaf lettuce on sandwiches so I passed on that.\u00a0 Since there is a lot going on between the buns, we rounded the meal out with some oven fries and called it good.\u00a0 Chips salsa and extra guacamole would have worked just as well.<br \/>\n<a href=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin9.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin9.jpg\" alt=\"chinkin9\" title=\"chinkin9\" width=\"520\" height=\"390\" class=\"aligncenter size-full wp-image-475\" srcset=\"https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin9.jpg 520w, https:\/\/crankymouse.com\/wp-content\/uploads\/2009\/03\/chinkin9-300x224.jpg 300w\" sizes=\"auto, (max-width: 520px) 100vw, 520px\" \/><\/a><br \/>\n<br clear=\"all\">I couldn\u2019t find a nice bunch of cilantro, but that would have perfected the dish.\u00a0 It would be easiest to chop finely and add it to the guacamole.\u00a0 Next time for sure, and I guarantee that there will be a next time.<br \/>\n<br clear=\"all\">Don\u2019t worry if you don\u2019t have premixed Mojito around.\u00a0 Just use extra lime juice and rum or some orange juice.\u00a0 Don\u2019t have smoked paprika, that\u2019s fine, use regular.\u00a0 <strong>I never follow a recipe exactly anyway.\u00a0<\/strong> This is just what I had to work with today.<br \/>\n<br clear=\"all\">Hopefully this Mojito-fueled
