One of my very first memories \u2013 when I had only one year and several months behind me in life \u2013 is of my mom struggling to make pie crust (a story for a different time). It is also the only memory I have of her making pie crust. The pies I knew were made by family members for Thanksgiving or gazed upon through thick glass at the bakery but never purchased. Their crisp crust and golden crimped tops seemed unattainable at home.<br \/>\n<br clear=\"all\">Yet pie is rather plentiful in the childhood home of my offspring. Fruit seasons are marked by stocking the freezer with plump pastries. A trip to the field or orchard almost undoubtedly means a slice for dessert. Hiking the berry paths in the woods under the August sun is cause for rolling up sleeves and breaking out the butter.<br \/>\n<br clear=\"all\">It should be of no surprise, then, that the mere suggestion of stuffing a double crust full of leftover chicken and all the spring vegetables we could come by was welcomed by the brood. They require someone to craft them with care, to cut butter into tiny cubes, to lovingly roll dough, select fillings, crimp crusts. A good baker transfers a bit of themselves into the layers of pastry and filling as their fingerprints mark the edge of the dough.<br \/>\n<br clear=\"all\">As the pie maker (not to be confused with <a href=\"http:\/\/www.amazon.com\/Pushing-Daisies-Season-Lee-Pace\/dp\/B000YAA2SQ\" target=\"_blank\" rel=\"nofollow\">THE piemaker<\/a>), I delight in seeing the golden crust emerge from the oven. I take comfort in watching my loved ones sit with a slice. A bed of baby arugula brightens up the rich qualities, and the combination is earthy and comforting. class=\"mv-create-instructions-title mv-create-title-secondary\">Instructions<\/h3>\n\t\t<li id=\"mv_create_21_1\">To make the crust, follow the directions in Perfect All-Butter Pie Crust recipe, omitting the sugar and adding in the thyme in its place.<\/li><li id=\"mv_create_21_2\">While the dough is resting, make the filling. Start by combining the boiling water with the thyme and rosemary sprigs and sea salt. Set aside.<\/li><li id=\"mv_create_21_3\">In a large saut&eacute; pan over medium high heat, heat the oil of your choice. Add in the leeks and cook for 5 minutes until they start to soften. Add the radishes and carrots and cook 5 more minutes. Stir in the peas, garlic, fresh thyme, parsley, and arrowroot powder. Stir to incorporate and cook for 2 minutes.<\/li><li id=\"mv_create_21_4\">Slowly, while stirring, incorporate the wine. Add about 1\/4 cup and stir to incorporate before adding more. Once the wine has been added, stir in the chicken.<\/li><li id=\"mv_create_21_5\">Remove the sprigs from the boiling water from earlier. Slowly stir the infused water into the mix. Cook just until the sauce starts to thicken. Add extra salt if desired. Remove from heat and cool to room temperature.<\/li><li id=\"mv_create_21_6\">When you are ready to bake the pie, preheat the oven to 415&ordm;F. Remove the dough from the refrigerator and roll out one disc to cover a 10\" pie plate. Fit the dough into the plate, and then roll out the second disc.<\/li><li id=\"mv_create_21_7\">Fill the bottom layer of dough with the chicken and vegetable filling. Place the top rolled dough over the filling. Crimp the edges to seal.<\/li><li id=\"mv_create_21_8\">Brush the top layer with the cream, and sprinkle with sea salt. Cut small slits in the dough with a sharp knife to vent.<\/li><li id=\"mv_create_21_9\">Bake at 415&ordm;F for 20 minutes. Reduce the temperature to 350&ordm;F and continue cooking for 30-35 more minutes, until the crust is golden brown.
