I like tacos. You like tacos. We all like tacos.<\/strong><\/center>

Taco night happens to be one of my favorite nights. It’s right up there behind burrito night. It’s easy. Chop, chop, brown the ground beef, stick it out on the table and let everyone assemble dinner for themselves. Nothing like getting everyone involved in the process.

Really, it’s all about the guacamole for me, but that is not a subject for today.<\/em>
\n
My second favorite thing about taco night is that it makes wonderful leftovers. Not taco salad leftovers, although those are good too; it makes a completely new and wonderful meal for a future date. Enchiladas.
\n
Now, these are not your authentic, corn tortilla, dipped-in-sauce enchiladas. Those will be coming later. These are the Americanized version, the easy ones. The very easy ones. The ones made from all that extra taco meat.

Just make an extra pound or so of taco meat with your tacos and spend 10 minutes while cleaning up taco night to prepare the enchiladas. Stick in the freezer for later. On that day you don’t feel like cooking. Because you don’t want to.<\/strong>

Easy Enchiladas<\/strong><\/p>\n

8-10 flour tortillas
\n1 pound leftover taco meat
\n1 can diced green chilies
\nDiced onions you may have from taco night
\n2 tablespoons cilantro (if you have it from taco night)
\n1 cup shredded cheddar or Mexican blend cheese
\n2 10-ounce cans of enchilada sauce
\n
Stir taco meat, diced green chilies, onions and cilantro together. Spoon mixture into flour tortillas and roll, placing in 9×13 baking dish, seam side down. Continue until pan is full.

Pour enchilada sauce evenly over the tortillas and top with shredded cheese. Cover and freeze until ready to use.

When ready to use, remove from freezer and bake at 350\u00b0 for 35 to 40 minutes until the cheese begins to brown. Let sit for 5 minutes before serving.<\/p><\/blockquote>\n<\/div>\n","protected":false},"excerpt":{"rendered":"
