{"id":14786,"date":"2013-11-11T13:16:10","date_gmt":"2013-11-11T18:16:10","guid":{"rendered":"http:\/\/crankymouse.com\/?p=14786"},"modified":"2013-11-11T13:16:10","modified_gmt":"2013-11-11T18:16:10","slug":"pumpkin-butter","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2013\/11\/11\/pumpkin-butter\/","title":{"rendered":"Pumpkin Butter"},"content":{"rendered":"<p>4 cups fresh pumpkin puree<br \/>\n1\/2 cup maple syrup (or brown sugar)<br \/>\n1\/4 cup apple cider<br \/>\n1 tablespoon ground cinnamon<br \/>\n2 teaspoons ground ginger<br \/>\n1\/2 teaspoon ground nutmeg<br \/>\n1\/2 teaspoon ground cloves<br \/>\n1 tablespoon bourbon or whiskey, optional<br \/>\n1 tablespoon lemon juice<br \/>\n1 teaspoon vanilla extract<br \/>\n<br clear=\"all\">Combine the pumpkin puree, maple syrup, apple cider, cinnamon, ginger, nutmeg, and cloves in a large saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and simmer for 25-30 minutes, until the butter is thick.<br \/>\n<br clear=\"all\">If desired for a smoother consistency, use an immersion blender and blend until smooth. Stir in the bourbon\/whiskey, lemon juice, and the vanilla.
