A water glass sits in front of me, condensation clinging to the slick sides. Conversations happen over my head and the ceiling fan makes near silent whooshes as I fight the urge to wiggle in my seat lest I be reprimanded by my guardians. I pull on the front of my shirt so that I can see it away from my body, studying the screen printed mountains against the purple backdrop, the rainbow-colored lettering.<br \/>\n<br clear=\"all\">And then from the kitchen there are the singsong voices calling out the pancakes as they weave from the kitchen to our table held high above the servers&#8217; heads puffed and glorious. There are some with whipped cream and berries and others with just a simple dusting of powdered sugar. The scent of eggy custard and vanilla overwhelms the table and sits right below my nose, drowning out all my other senses.<br \/>\n<br clear=\"all\">My favorite puff pancake, however, has and will forever be one with the apples cooked directly into the custard-like center. They shine on one side like stepping stones pressed into mortar, and if you were to flip the pancake to the other, you&#8217;d see the caramelized side, golden and brown, sticky with maple and butter.<br \/>\n<br clear=\"all\">I&#8217;ve taken this family favorite breakfast\/brunch\/brinner recipe and added a small bit of crunch to the top for contrast. The maple syrup in this puffed baby is enough, and they can be served without any extra toppings, just a fork and a napkin.
