{"id":14407,"date":"2013-08-30T14:58:35","date_gmt":"2013-08-30T19:58:35","guid":{"rendered":"http:\/\/crankymouse.com\/?p=14407"},"modified":"2013-08-30T15:00:36","modified_gmt":"2013-08-30T20:00:36","slug":"peach-bourbon-pie-with-bacon-brown-sugar-crumble","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2013\/08\/30\/peach-bourbon-pie-with-bacon-brown-sugar-crumble\/","title":{"rendered":"Peach Bourbon Pie with Bacon Brown Sugar Crumble"},"content":{"rendered":"<p>1 9&#8243; pie crust dough (half the <a href=\"https:\/\/crankymouse.com\/recipes\/perfect-all-butter-pie-crust\" target=\"_blank\">all-butter pie crust recipe<\/a>)<br \/>\n<em>For the filling:<\/em><br \/>\n6 cups sliced peaches<br \/>\n1\/2 cup brown sugar<br \/>\n2 tablespoons bourbon<br \/>\n2 tablespoons quick cooking tapioca (not pearls)<br \/>\n1 tablespoon fresh lemon juice<br \/>\n1 teaspoon vanilla extract<br \/>\n<em>For the crumble:<\/em><br \/>\n4 slices bacon<br \/>\n1\/2 cup brown sugar<br \/>\n1\/2 cup all-purpose flour<br \/>\n1 vanilla bean, scraped<br \/>\n4 tablespoons softened butter<br \/>\n<br clear=\"all\">Preheat oven to 375\u00ba F. Roll out the pie dough and fit in a 9&#8243; pie plate, crimping the edges as desired. Place in the refrigerator to stay cool while you prepare the filling and crumble.<br \/>\n<br clear=\"all\">Place the peaches in a large bowl. Add the brown sugar, bourbon, tapioca, lemon juice, and vanilla. Toss to coat the peaches thoroughly.<br \/>\n<br clear=\"all\">Cook the bacon over medium heat in a skillet until crisp. Remove the strips from the pan and set aside on a paper towel to drain. Reserve the grease. In a bowl, combine the brown sugar, flour, vanilla bean seeds, butter, and the bacon grease. Cut together with a fork until crumbly. Break the bacon slices into small pieces and add it to the crumble.<br \/>\n<br clear=\"all\">Remove the pie crust from the refrigerator. Pour in the peach filling, and then spread the crumble topping evenly across the top of the pie.<br \/>\n<br clear=\"all\">Bake for 10 minutes at 375\u00ba F, then reduce the heat to 350\u00ba F and bake for an additional 40-45 minutes or until the top and edges of the crust are golden brown.
