{"id":13801,"date":"2013-05-17T13:33:17","date_gmt":"2013-05-17T18:33:17","guid":{"rendered":"http:\/\/crankymouse.com\/?p=13801"},"modified":"2013-05-17T13:53:17","modified_gmt":"2013-05-17T18:53:17","slug":"spinach-avocado-quinoa-salad","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2013\/05\/17\/spinach-avocado-quinoa-salad\/","title":{"rendered":"Spinach Avocado Quinoa Salad"},"content":{"rendered":"<p>1 cup quinoa<br \/>\n1 tablespoon avocado oil<br \/>\n1\/4 teaspoon salt<br \/>\n1 tablespoon apple cider vinegar<br \/>\n2 cups baby spinach leaves, washed and dried<br \/>\n1\/4 cup diced orange bell peppers<br \/>\n1\/4 cup halved grape or cherry tomatoes<br \/>\n2 tablespoons thinly sliced red onions<br \/>\n1 cup creamy avocado yogurt dressing<br \/>\nSavory Parmesan granola<br \/>\n<br clear=\"all\">Thoroughly rinse the quinoa under cold water for 2 minutes and drain. Heat the avocado oil to a medium saucepan over medium-high heat. Add the quinoa and cook, stirring constantly, for 1 minute to toast.<br \/>\n<br clear=\"all\">Pour in 2 cups of water and the salt and bring to a boil. Once boiling, turn the heat to low and cover. Cook for 15 minutes.<br \/>\n<br clear=\"all\">Remove from the heat and let the quinoa stand for 5 minutes. Drizzle in the apple cider vinegar and fluff the quinoa with a fork. Transfer to a bowl and allow to cool in the refrigerator until chilled through.<br \/>\n<br clear=\"all\">Place the spinach leaves in a large bowl. Top with the chilled quinoa, bell peppers, tomatoes, and the red onions. Spoon the avocado dressing over the top.
