{"id":13181,"date":"2013-02-19T19:33:43","date_gmt":"2013-02-20T00:33:43","guid":{"rendered":"http:\/\/crankymouse.com\/?p=13181"},"modified":"2013-02-19T19:37:09","modified_gmt":"2013-02-20T00:37:09","slug":"ham-and-potato-beer-cheese-soup","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2013\/02\/19\/ham-and-potato-beer-cheese-soup\/","title":{"rendered":"Ham and Potato Beer Cheese Soup"},"content":{"rendered":"<p>2 tablespoons olive oil<br \/>\n1 onion, diced<br \/>\n1 stalk celery, chopped<br \/>\n2 cloves garlic, minced<br \/>\n8 tablespoons flour<br \/>\n1 cup Irish stout<br \/>\n2 cups ham pieces<br \/>\n4 cups diced golden potatoes (peeled or unpeeled)<br \/>\n5 cups ham stock<br \/>\n5 tablespoons butter<br \/>\n1 cup milk<br \/>\n2 cups shredded sharp cheese (like Dubliner)<br \/>\n<br clear=\"all\">Heat oil in a large stock pot. Add in the onion and celery and saut\u00e9 until tender and then stir in the garlic. Add 3 tablespoons of the flour, stir, and cook for 2 minutes, until it starts to turn a golden brown. Slowly pour the stout in while stirring. Once the stout is incorporated the potatoes, ham, and stock can all be added. Bring to a boil over medium-high heat. Cook until the potatoes are just tender. Reduce to a simmer.<br \/>\n<br clear=\"all\">In a separate pot, melt the butter over medium heat. Whisk in the remaining flour and cook for 3 minutes. Slowly whisk in the milk until incorporated. Add the cheese in small handfuls, stirring between additions until melted.<br \/>\n<br clear=\"all\">Once the cheese sauce is ready, spoon a ladle of hot stock into the cheese sauce and stir to thin. Repeat once more. Pour the thinned cheese sauce into the soup pot and stir to incorporate.
