{"id":11008,"date":"2012-03-06T09:11:05","date_gmt":"2012-03-06T14:11:05","guid":{"rendered":"http:\/\/crankymouse.com\/?p=11008"},"modified":"2012-03-06T09:11:05","modified_gmt":"2012-03-06T14:11:05","slug":"mini-berry-pies","status":"publish","type":"post","link":"https:\/\/crankymouse.com\/index.php\/2012\/03\/06\/mini-berry-pies\/","title":{"rendered":"Mini Berry Pies"},"content":{"rendered":"<p>1 recipe <a href=\"https:\/\/crankymouse.com\/recipes\/perfect-all-butter-pie-crust\" target=\"_blank\">classic pie dough<\/a><br \/>\n2 cups frozen or fresh raspberries<br \/>\n1\/2 cup berry preserves (like <a href=\"https:\/\/crankymouse.com\/recipes\/raspberry-peach-white-wine-jam-to-celebrate-summer\" target=\"_blank\">Raspberry Peach White Wine Jam<\/a>)<br \/>\n1 egg, lightly beaten<br \/>\n1 teaspoon cream<br \/>\n2 tablespoons turbinado sugar<br \/>\n<br clear=\"all\">Preheat oven to 350\u00ba F. Line a large baking sheet with a silicone baking mat or with parchment paper. In a small saucepan, heat raspberries and preserves over medium heat until bubbling. Continue cooking another 5 minutes or until thick. Remove from heat.<br \/>\n<br clear=\"all\">Roll pie dough 1\/4&#8243; thick. Cut out an equal number of circles using a 3.5&#8243; round cookie cutter. Place one circle down on the baking sheet. In the very center spoon a mound of pie filling, 1-2 tablespoons. Place a paper stick on top of the filling and then carefully cover with a second circle. Press edges all the way around the circle to seal. (Edges can be pressed with a fork, fingers or crimped slightly.) Repeat with all remaining pie dough circles.<br \/>\n<br clear=\"all\">Beat together egg and cream and brush over the tops of the circles. Vent by making four small slits in the pie crust. Sprinkle with turbinado sugar.<br \/>\n<br clear=\"all\">Bake for 20-25 minutes or until pie crust is golden and baked through.
