A Labor Day Giveaway: Mixed Grill Skewers Recipe

A quick and easy garlic chicken mixed grill shish kebab recipe and a giveaway for an Everyday Grillin’ Prize Pack with cast iron skewers from Bush’s Beans.

So, this is it. Summer has come to a close. Tomorrow the world will change and start spinning in the opposite direction, replacing long days at home with little directing our path with long days of school and structure.

Labor Day doesn’t mean the end of grilling season for my husband. In reality, I think sometimes we may even grill more once school is in session because of the ease of use factor. Meals done in minutes, and there’s always so little clean-up involved. (Read: No washing pots and pans.)

The only tools here are a small bowl for the sauce and a cutting board for chopping. It’s five minutes of prep, 10-12 minutes of grilling, and the food is on the table. This is the perfect answer to the crazy back-to-school days or an impromptu last-day-of-summer-vacation meal.

Shish kebabs were one of my favorite meals when I was growing up. Everything is better with a stick shoved through it. It’s like serving toothpicks with lunch to a kid. Fun, easy, endlessly entertaining. We paired our garlic grilled chicken skewers with Bush’s Sweet Mesquite Grillin’ Beans.

Garlic Chicken Mixed Grill Skewers

Print me!
2 pounds chicken breast, cut into 1″ pieces
2 yellow summer squash, cut into 1/2″ coins
2 zucchini, cut into 1/2″ coins
1 medium red onion, cut into chunks
For the garlic sauce:
1/4 cup lemon or lime juice
2 tablespoons Dijon mustard
2 tablespoons honey
2 cloves garlic, minced
2 tablespoons chopped fresh lemon basil leaves
1/2 cup olive oil
salt and pepper

Preheat your grill to medium heat. Take wooden, stainless, or cast iron skewers and thread onto the skewers.

In a small bowl, combine lemon juice, Dijon, honey, garlic, and fresh basil. Slowly whisk in the olive oil. Season with salt and pepper.

Place the skewers on the grill and baste with the garlic sauce. Cook for 10-12 minutes, turning and brushing with the sauce occasionally, until chicken is cooked through and vegetables start to char. Serve warm.


NOTES: You can use other vegetables like corn cob slices, tomatoes, or any other vegetables you have on hand.

    We love inch thick pork chops, grilled and brushed with melted butter, garlic salt and bbq sauce. We love the Steakhouse Recipe for Bush’s Baked Beans (little spicy and tangy. Then we cook cut up potatoes with butter and onions. So good.

    We love everything from hotdogs to steaks to pizza on the grill. With the heat this summer almost every meal was cooked on the grill including the side dishes.

    My absolute favorite on the grill is corn! My mouth waters just thinking about it. Just peel everything off, add olive oil, salt and pepper, and YUM!

    I love grilling Halloumi cheese and I think that paired with some grilled veggies (zucchini, mushrooms, etc) and a side of beans would be super tasty and filling.

    I love grilled pineapple. I’d like to try poundcake. With the beans, maybe try chili on the grill with a cast iron pan. Or maybe make chili dogs.

    Love making BBQ on the grill. Just made them for 25 on Labor day. I start them in the oven and finish on the grill. They are always a hit!

    We have not grilled all summer, but I would love to this fall. Mango is one of my favorite grilled tastes. Mango with chicken, lamb, artichokes, tomatoes, just about anything.

    We grilled some Beer Brats for Labor Day! Served on Chicago rolls with sauteed onions, ketchup and dijon mustard along with and a side of Bush’s Southern Pit BBQ grillin’ beans!

    Oh goodness… I’m not ready for it to be over (denial)! I have been grilling a lot this week… no kebabs, but lots of blue fish and salmon and veggies. So, that’s probably what I’d pair the beans with… if I got my hands on some. 🙂

    I would grill up a couple steaks with some cut up zucchini with onion and bacon in it and have warmed up bush beans all cooked on the grill.

    Grilling is so quick, easy and there’s less cleanup. With school back in session, definitely a good idea to keep the grill out – shish kebabs are a fun way to get kids to eat veggies with their protein. Great idea!
