An Easter Dinner Menu

Easter is coming up quick. Here’s a classic Easter dinner menu with some new flavors and ideas to get you thinking of how you can switch things up a bit for your family dinner.

I’m not quite sure how we’re at the end of March, as it feels like we were just the other day making green eggs and ham. Still, here we are looking into April and the (hopefully) warmer weather it will bring.

Now is also about the time we start thinking about what to do for Easter dinner. This year we have three separate Easter celebrations to attend, and when I think about sitting in a room surrounded by family and food I get excited. I can’t think of a time when my extended family would get together that didn’t center around some sort of meal or buffet-style option.

So, I headed over to Foodily for inspiration, and created an Easter dinner menu. Rather than look for off-the-cuff inspiration, I chose the dishes I wanted to make and looked for new versions of them that sounded good. A poppy seed fruit salad? I think I will, thank you. Watercress deviled eggs? Of course.

Today is also the last day of the SC Johnson Clean Start Challenge on Lifetime Moms. I’ve had such a wonderful time supporting and promoting Beth as we worked to raise awareness about bullying and the importance of boosting children’s self-esteem and also working to donate to Love Our Children USA. Thank you to everyone who took the time to vote the last three months and to everyone involved in the challenge.


Appetizer โ€“ Watercress Deviled Eggs, Prosciutto-Wrapped Asparagus Bundles

Side Dishes โ€“ Scalloped Potatoes, Snow Peas in Ranch Dressing, Poppy Seed Fruit Salad

Main Course โ€“ Sugar-Crusted Lamb, Apricot-Glazed Ham

Desserts โ€“ Easter Egg Cookies, Individual Pavlovas with curd and fruit

The Preparation Shortcuts:

1. Mix together dressings beforehand and hold in airtight containers until time to serve. Do the same with sauces that potatoes or vegetables will bake in.
2. Boil eggs in advance and prepare filling. Prep by placing in a piping bag and then store tied off, with egg white halves in an airtight container. Pipe into eggs the day of before serving. You can also prepare asparagus bundles ahead of time without baking, and then bake when ready to serve.
3. If you have only one oven, doing the lamb in the oven and the ham on the grill can keep space open for side dishes like scalloped potatoes.
4. The cookies can be made a day or two ahead of time, as well as the meringues and the lemon curd. Just wait to fill and top the meringues until it’s time to serve.

    I’m coming to your house for Easter ๐Ÿ™‚ YUM!! My menu this year has a turkey breast as well as a ham that way all the picky eaters are taken care of.
