Quick School Lunch Tip: Peach Freezer Smoothies

I tend to get a bit greedy with peaches, as in I buy them by the crate. Last week I realized I was either going to need to eat the remaining 5 pounds I had still to get through that hadn’t been processed to freeze or eaten fresh or baked into muffins. I knew I needed to get them taken care of before I left later this week, so a smoothie-ing they must go.

My kids love smoothies, and they love taking them for lunches as well. We round it out with vegetables and hummus and a few cheese squares, and they have a fantastic lunch that hardly takes any time to put together because we’re just tossing in our peach freezer smoothies that we made earlier. I recently shared 5 tree-nut and peanut-free lunches over on Babble that you can send with your kids to school, and I’ve been showing a sampling of our different school lunches over on the Food for My Family Facebook page.

I like to add a banana to most smoothies because it gives them a good, smooth texture, but if you don’t like bananas or don’t have any, just leave them out and add a bit more of another fruit.

What are some of your favorite school lunch tricks, tips and ideas? How do you keep your kids interested in what comes in that lunch sack day after day?

Strawberry-Peach Freezer Smoothies

Print me!
2 cups peaches, peeled
1 generous cup frozen strawberries
1 ripe banana
1 tablespoon honey
1 tablespoon chia seeds or ground flax
1/2 cup milk, almond milk, coconut milk or soy milk

Add peaches, strawberries, banana, honey and milk to a blender. Blend until all chunks have been broken down and the smoothie is one uniform consistency. Pour into freezer containers and freeze.

Remove from freezer at least 4 hours before serving if storing in an insulated lunch bag. If setting on the counter to thaw, remove 1-2 hours before serving. Mix it up before digging in.


Makes 3 1-cup servings.

    I <3 smoothies, too. I like to have rice cakes w/peanut butter along with the smoothie, to round out the meal. Will have to add this one to me recipe arsenal!

      I really love using mason jars or even old jars from jams, olives, sauces that would usually get tossed…keep them they are perfect for packing smoothies.

        I have also found that adding a few thinnly sliced pieces of the fruit to the top or sides adds the extra appeal for my child. Best wishes to all!

    Me too. I do love smoothies. And it’s a good thing that I came here. I learned another great recipe. Thank you for sharing this with us. I really appreciate it. By the way, you might like to try stainless steel tiffin container for your lunches. This will you help a lot in your everyday living especially when you’re traveling, working in the office, schooling, doing outdoor activities. 😉

    Where did you get your container for the school lunch smoothie. I would love to do this for my kids lunches but we are alwyas running into the problem of leaking cups. Could you email me an answer if you got the time?

      I actually just picked up those BPA free plastic freezer containers at Target yesterday. You can get 5 for less than $5. They are a seasonal canning item so you’ll want to pick them up soon before they’re gone!

      You can get them in the canning aisle. They’re freezer canning containers. You can also find them on Amazon.

    If you don’t like the banana taste to your smoothie then put in some avocado which also gives it that smooth texture and is so healthy for your kids.

    I tried these as I thought it would be a fabulous idea but once thawed the smoothie spelled into my daughter’s lunch bag. Has anyone else had the same problem with these containers?

      If you don’t have them screwed on straight and tight, I can see how they might spill. However, these containers were specifically made for freezing, and I haven’t had issues with them leaking. We have also frozen them in stainless steel bottles. I would say use a container that works for you.

    I have made smoothies hundreds of times and adjusted it to the texture and taste my kids like. We have found that using yogurt works better than milk. Then add a small amount of 100% fruit juice. I use my emulsifier to blend and they are perfect!

      For my smoothie I use
      yogurt. frozen peaches, frozen strawberries, bananas. grape juice and ice cubes. I have also used orange juice. Like the grape better tho. Put it all in the blender. So good.

      Virtually anything. I’ve found that smoothies with bananas, yogurt, or another creamy addition tend to reconstitute better when thawing than those without.
