The Monday Menu: January 25, 2010

I hope you’ll forgive me for my silence this week. I’ve been getting together things for this and things for that, and I’ve also been busy writing here, there and everywhere else. If you missed them, you should check out my Asian Orange Chicken Salad, vegetable broth from scraps and my new recipe binder that I received as a gift this Christmas. I’ve also got news on the horizon that I can’t wait to share. I’m excited about it, and I hope you all will be as well!

This weekend I took Kumquat to get her very first haircut. She may be three and a half, but I was hanging on to those curly locks at the very bottom of her hair. She did great, and I laughed at how adult she looked hanging out in the chair, sitting as still as can be and making small talk with the stylist.


Monday – Leftover pit beef sandwiches, spring mix salads. Ole brought pit beef to Dave’s for the football game tonight. He made extra, so we’ll be eating that tomorrow. It’s a good thing it’s so good.

Tuesday – Reubens held over from last week. I finally decided! A week later.

Wednesday – General Tso’s chicken with steamed rice, chicken spring rolls; Joel’s coming over again, this time because we’re going to go watch Ole’s curling team. Exciting?

Thursday – Spinach and ricotta ravioli with Caesar salads

Friday – Orange cornish game hens using the last of the pomegranates to switch it up a bit, couscous with herbs and broccoli

Recipes on Food for My Family last week: Um, so, yeah. Fish tacos, anyone? I’ll make it up to you by posting chicken fried rice, well, now.

    Oh, you are such a good cook to make the ravioli! I’ve been buying that exact kind – spinach and ricotta – frozen from Central Market. Love it! Yum!

    Ole’s on a curling team? My daughter dated John Schuester (sp?) once. ***captain of the US curling team. Sorry if you knew that already. They both went to school at UMD.
    Those chicken spring rolls sound so yummy. As does the pit beef. We’re doing a huge pork roast tonite and then pulled pork sandwiches later this week. Have a good one!

    Those spring rolls sound delicious as does the cornish hens. I always thought that they would be hard to cook with but I keep seeing them on menu plans so I might have to give it a try. Have a great week!

    Kelly, we’ve found the key to getting a good sandwich is to lightly toast the bread first so that it stands up to the juice from the meat and the sauerkraut. That way you aren’t left with a soggy sandwich!

    Milehimamma, it’s a bit more work, but I’ve found that it’s worth it when we can make it happen. Plus, I love making the kids help with the pinching and sealing.
