The Monday Menu: October 19, 2009

Life has been rather hectic lately. I feel like I’m being pulled in 12 different directions, and unfortunately, none of them are the ones I’m interested in being pulled towards. I’m working towards planning a more toned-down week that focuses on things I am interested in: cooking, baking, keeping my house organized, participating in family activities, editing photos and working a bit less. We’ll see how well I do at achieving an appropriate work-life balance. If such a thing exists.

To start the week off, I’ll be heading to a string of doctor’s appointments early tomorrow morning. Hopefully everything checks out, both routine and non, and then I’ll have to decide to give the kids the flu vaccines or not. To flu or not to flu? To swine or not to swine? I still have 9 hours to make a decision.


Monday – Orecchiette pasta with chicken, caramelized onions and blue cheese, spring mix salads, bloomin’ bread

Tuesday – Pit beef on hard rolls with horseradish, grilled avocado pesto tomato salad

Wednesday – Smoked BBQ ribs, perfect mashed potatoes, baked acorn squash and maybe some jalapeño cornbread to make Ole happy

Thursday – Bacon-wrapped salmon, wilted spinach salad

Friday – Caprese grilled pizzas and maple vinaigrette salads

Recipes to look for here at Food for My Family this week: My take on candy corn, brick chicken with scallion and lime butter and apples! I have apples, and I’ll be baking with them…finally.

    Hi!

    Wow, what an incredible menu! It sounds like a restaurant menu!

    Good luck with the decision on the vaccinations. I have decided to do neither for myself or my kids but I do worry about that decision.

    I’ve got more salmon in the freezer from DH fishing trips to use up — I think I’ll try it wrapped with bacon. Sounds Yummy!
