The Monday Menu: October 12, 2009

I spent the weekend playing with my camera (that’s my 14-day-old niece above), working and getting ready for the book fair at Kiwi’s elementary school…in between numerous engagements that kept me out and running around. I’m beginning to consider hiring a personal assistant. Someone who could scrub my dining room floor and do dishes and laundry. Let me know if you’re interested. I will cook for you.

Several of our meals are going to be things that come together quickly or are easy to make with four kids underfoot since most days this week either Ole or I will be missing. However, we’ve had our fill of junk food and food on-the-go with all the running around we did on the weekend, so it’s coming from the kitchen, and processed is just not an option. I’ll be logging volunteer hours at Kiwi’s school, and Ole will be participating in his watershed district meeting and teaching his college class of soon-to-be teachers all about rocks and water.


Monday – Grilled Dijon Salmon, steamed brown rice, green beans

Tuesday – Steak au Poivre, garlic mashed potatoes, zucchini

Wednesday – Pesto night from the freezer with pasta, garlic bread and salads. This takes only as long to prepare as it does to boil noodles. Painless.

Thursday – Moroccan Spiced Chicken, couscous and feta and tomato salad

Friday – Mediterranean Pasta because I love it so, and it is another meal that is all dump and serve.

Recipes to look for here at Food for My Family this week: Those ribs will finally go up or else. Or. Else. Also in the works are Chicken Cordon Bleu and Halloween treats that will be the perfect gifts to send to faraway friends.

    LOVE the picture. And I know you’re just kidding about the personal assistant bit, but I would definitely come over and scrub your floors in exchange for some good cookin’. 🙂
