The Monday Menu: July 27, 2009

I would like to go back to Friday and do this weekend over again. It was far too short. I did, however, manage to get some work done, the grocery shopping completed and keep my house relatively clean. I also attended a baby shower and filled out the paperwork for our new car (new to us) because the old one is no more.

I was so happy just to have the grocery shopping done, my menu had to kind of come together despite all the things I’d meant to get and didn’t because of the little people pounding on the inside of my eyelids. It’s okay, though. We have more food than we can eat, and I’m thrilled at the prospect of working with what we have. If I decide there’s anything I absolutely must have, I’ll use it as an excuse for a mid-morning walk. I need to get out of the house more anyway. Otherwise, we’ll be waiting to purchase the tuna until the day we’re going to make it, so I could always squeeze a few other randoms in there, right? No one will notice.


Monday – Angel hair pasta with a lemon butter sauce and shrimp scampi, steamed garden vegetables

Tuesday – Grilled whole chicken, grilled garlic zucchini rounds, popovers

Wednesday – Italian sausage and peppers with make-ahead manicotti, spring mix salads

Thursday – Sesame-encrusted seared Ahi tuna steaks, spring mix greens with a sesame ginger vinaigrette, Vietnamese summer rolls

Friday – T-bone grilled steaks (on sale at our local supermarket this week), twice-baked potatoes, grilled corn on the cob

    Sounds yummy! I’ve been looking for a good zucchini bread recipe. Any chance you could email it to me early? We’re going out of town on Saturday and I want to make it before then.

    I’ve never made scampi at home. I do order it out, but have never tried it at home. So, what time is dinner tonight? LOL

    so I’ll be over Thursday? Mmm, spring rolls. Love them and need to try my hand at them. Remember we’ll have grilled goods for the O6 tomorrow… so you may want to put that chicky back in the freezer 🙂
