The Monday Menu: June 8, 2009

Shaina · June 7, 2009 · 3 Comments

gbeansWe went to the Walker Saturday for First Free Saturdays with Tiff (who happens to be married to a MN athlete of the month). Kola Nut and Kiwi made kites as part of the activities provided by the center for Up, Up and Away in combination with the Lighter than Air exhibit, and I haven’t heard the end of “when can we fly the kites” since. When it stops raining. The rain also caused the aerial performers to be canceled, which had been the original motivation for the outing, but it obviously didn’t stop us from walking through the museum to appreciate contemporary art at its finest.

We’re planning on visiting Mac’s Fish and Chips this week. It is a gem of the neighborhood and guaranteed to make you gain five pounds in one meal just on account of grease ingested with your tasty slabs of fish and cups of tartar sauce. It’s right up there with Mavericks, where you can get roast beef the way it was meant to be. I am decidedly not thinking Arby’s.

We have had a lot of excess in our fridge. It’s almost embarrassing, but it tastes good, so we roll with it. It’s time to clean out what’s sitting around before it goes bad. So, when we’re not tailgating or visiting the neighborhood eateries, it’s coming out of our freezer, our fridge or our garden. I artistically shuffled ingredients and searched the house so that the groceries came in under $60.00 this week, which consisted of mostly fresh fruit and vegetables we didn’t already have on hand.

Monday – Mojito chicken sandwiches with five-minute guacamole, creamy orzo and rice

Tuesday – tailgating at the St. Paul Saints game: TBA but I predict some variety of meat will make an appearance on a teeny grill in the parking lot

Wednesday – Italian sausage and peppers, spicy red pepper spaghetti, Gorgonzola cheese bread

Thursday – Blue Maple Steak Salad (blue cheese and maple crusted pecans), The Bread, In His Words

Friday – Mac’s Fish and Chips (This is a heart attack in a white paper bag, but it is oh so good, as any fish fried in the back of an old trailer should be.)

Rumor has it that there’s a stiff swim competition at the Benathalon this year, can’t wait to see if our MN athlete outshines the GAC swimmers. Happy tailgating this week.

Niki’s last blog post..One gallon of Pinecone Hill please, hold the VOCs
