Five-Minute Guacamole

So, I realize that some of the things we do for meals may seem more involved than you want to get on your average weekday evening. Have you seen the Make-Ahead Meals section? Trust me. We have those nights too. In fact, we have those nights an average of 5 out of the 7 days in any given week…so we plan for them by alternating the involved with the less involved.

However, some things that seem difficult are not. For instance, if you think guacamole takes a long time to make, you are mistaken. I know I’ve previously detailed my love affair with the fruit, but really, making guacamole does not have to be an involved process. In fact, it takes just five minutes. That means it’s five minutes to guacamole spread on my burgers, chicken sandwiches, as an afternoon snack, at inappropriate times at night when I should be sleeping. That five minutes is worth it.


Remember these? I’m using three avocados for this recipe. You can use one or two if it’s for a smaller group of avocado lovers.

00:00-01:30 – Halve your avocados and scoop into bowl. If you’re talented with a knife, slice into pieces prior to scooping, as shown here.

01:30-02:30 – Add your seasoning: garlic, salt, pepper, cumin, lime juice. I’ve seen a few people add oregano, and I like it if it’s fresh, but I’m not a big fan of dried oregano flakes in my guacamole. You could also add cilantro here, but because I’m adding pico de gallo, it’s not necessary.

02:30-03:45 – Mash your guacamole using a nifty masher, a fork, the bottom of a cup or anything else you have that helps you release your pent-up frustration. I know you have some somewhere, take it out on the avocado instead of your significant other. Avocados are forgiving.

03:45-04:30 – Toss in some pico de gallo if you have some. There are varieties you can buy in the refrigerated section at the supermarket too. Choose one that looks like it has the freshest tomatoes. You could also skip this step. It’s ncie to have some variety with the tomatoes and onions in there, but it’s not necessary. I don’t add it if I’m using guacamole to spread on a sandwich. I also don’t use it if I don’t have it ready for something else. It’s the laziness factor.

04:30-04:55 – Stir it all up. If you skipped the pico de gallo addition, move to the next step. You’re done early!

05:00 – Grab a chip – blue corn today – and dip in while your family isn’t looking.

Five-Minute Guacamole


Ingredients
3 ripe avocados
1 clove minced or pulverized (with the help of a garlic press) garlic
1/2 teaspoon cumin
1/4 teaspoon salt
pepper to taste
juice from 1/2 lime
1/4 cup pico de gallo, if desired.

Scoop avocados into bowl and add garlic, cumin, salt, pepper and lime juice. Mash together, leaving a few chunks. Scoop in pico de gallo if desired. Mix. Eat.

6-8 servings.
