The Monday Menu: April 12, 2009

dsc09934-640x480Easter’s over, and I’m still full. Hopefully some of the sugar wears off my kids by morning. We’re going to use our Easter spoils in two of our meals. Our freezer emptying from last week led to Ole smoking a brisket this weekend. We also had a holdover from last week. Costco was out of salmon when we went, so we improvised and pushed that to this Wednesday.

I’ll also be trying to get gardens and outdoor stuff going this week because it is FINALLY warm enough to be out there for an extended period of time without feeling like my fingers are going numb from cold. I’m excited to get started on my herbs. I grumbled when I had to purchase fresh herbs this weekend.


Monday – BBQ brisket, coleslaw, baked beans, baked apples

Tuesday – Life After Ham: hot (leftover) ham and cheese braid, soup and salad

Wednesday – teriyaki salmon, rice, spring rolls

Thursday – Shepherd’s pie (leftover mashed potatoes), salad

Friday – gyros, rice, asparagus

I’ll be posting links once a few of our recipes are up! I just have to make them first.

    Great job! Do you outline all of your blog posts? I’ve read a few of them now and they are way higher quality than other blogs I’ve read.
