The Monday Menu: April 6, 2009

sunriselakesuperiorWe’re back from our North Shore of Lake Superior adventure. Bags are being unpacked, clothes washed, snowboards and snow pants are being stored until next winter.

We haven’t had much time to plan, but we did come up with a menu focused on clearing out the freezer. We’ll be making our weekly trip to the grocery store tomorrow. Right now, I have to figure out where I packed my face wash so I can crawl in bed and close my eyes before the new week begins.

Monday: Chicken pasta salad, popovers

Tuesday: Spinach and cheese ravioli, grilled Italian sausage and sweet peppers, spring mix salad

Wednesday: Teriyaki salmon, rice, spring rolls, green beans

Thursday: Egg, ham and cheese cups, strawberries

Friday: Lemon and herb roast chicken, crash hot potatoes, spring mix salad

    Just finished eating the Crash Hot Potatoes, along with some Broccoli & Cheese for dinner. Would definitely make them again.

    We just ate the crash hot potatoes, and they are the new black. We made half the batch with thyme, and half with rosemary and liked both equally. Awesome recipe, we’ll make them again very soon. Great link!
