The Monday Menu: March 30, 2009

Spring is here! See the flower?

Too bad there is snow in the forecast for this week. Fluffy white snow…flowers…spring is dead.

In honor of the winter-like weather, I’m making a Thanksgiving dinner to say goodbye to March. Comfort food to help me get through the snow predicted for Tuesday.


Monday: California grilled chicken sandwiches with avocado, chips and salsa, baked french fries

Tuesday: Turkey breast, cornbread dressing (with the leftover cornbread from last week), sweet potatoes, green beans

Wednesday: The last soup night until next winter.

Thursday: Almost Cheeseless Pasta Casserole from 101 Cookbooks, spring mix salad (I was having a hard time deciding what this night would be, and then I saw feta on sale and remembered I had this bookmarked.)

Friday: On the road. We’re going snowboarding and bringing the kids.

Saturday: Bringing lasagna for a crowd, sides to be provided by friends.


I hope it’s warmer wherever you are!
